Through your tour of Italy, you will have learned that there are many differences
in Italian cuisine. Many recipes are typically northern and other recipes
are typically southern. By visiting the regions of Italy, it has
given you a better understanding of how the geography has influenced the way
people eat and drink and how the agriculture of a particular region has influenced
not only the way people make a living but also in how they eat. You
have also seen that it is not so easy to decide on what types of foods are
to be served at an Italian restaurant. Do you want a fancy complicated
cuisine or do you want a cuisine that is typically authentic Italian home
cooking? If you were an actual chef from the "Culinary Institute of
America," what would you do?
